"Wine should speak for itself," he says. "It should be like a good song—honest, unfiltered, and with a story to tell."



    The Roots: Podere San Biagio

    Podere San Biagio isn’t just a winery; it’s a time capsule. The land has been in Jacopo’s family for decades, originally used for growing grains and olives. It wasn’t until 2000 that they started producing wine, and in 2014, Jacopo took over, bringing with him a passion for organic farming and a natural, hands-off approach.

    "The vineyard is like a stage," he says. "The grapes are the instruments, and my job is just to keep them in tune."

    Situated between the Adriatic Sea and the Apennine Mountains, the vineyard is a playground of clay-limestone soils, cooled by mountain breezes and warmed by the sun. It’s the kind of place where the vines are wild and the wines are a little wild, too. "I don’t want to tame them," Jacopo laughs. "I want them to express themselves."

    The Wines: Bold, Untamed, and Full of Character

    Jacopo’s wines aren’t for everyone—and that’s exactly the point. He’s not trying to make perfectly polished, predictable wines. He’s making wines that speak to the land, the vintage, and his own artistic vision.

    Trebbiano,Podere San Biagio: This isn’t your typical crisp white wine. Jacopo’s Trebbiano spends 90 days fermenting on the skins in amphorae, pulling out intense flavors of ripe yellow fruit and dried herbs. It’s bold, earthy, and slightly wild, with a structure that stands up to spicy dishes like Thai green curry or Szechuan stir-fry. "It’s like a rock song," Jacopo says. "A little rough around the edges, but it sticks with you."

    Montepulciano, Podere San Biagio: If Trebbiano is the rock song, Montepulciano is the power ballad. Made with 100% Montepulciano grapes from old vines, it’s aged for two years in oak, giving it deep, spicy notes of black cherry, tobacco, and leather. The tannins are firm but smooth, like a bass line that grounds the whole experience. "It’s the wine I’d want to drink on a rainy night with a good book and some dark chocolate," Jacopo says.

    Why Natural Wine?

    For Jacopo, natural wine isn’t just a trend—it’s a way of life. "I don’t add anything, I don’t take anything away," he says. "It’s about letting the grapes speak for themselves."

    That means spontaneous fermentation, no filtering, and only minimal sulfites at bottling. It’s a process that’s riskier, sure, but it’s also more honest. "If you taste one of my wines and it’s a little funky, that’s because that’s what the land wanted to say that year," Jacopo explains. "I’m just here to translate."
