The natural sparkling wine category goes beyond Champagne and Prosecco. Independent wine producers from around the world are experimenting semi-sparkling wine like frizzante in Italy, and pét-nats made from native grapes like Scheurebe and Bacchus in Germany. Artisan winemakers love working with pét-nats because, unlike Champagne or traditional sparkling wine, the juice in pét-nat wines is bottled before the first fermentation is finished. This style of winemaking adds a certain element of surprise to every bottle of pét-nat because the winemaker is never exactly sure how the wine will turn out until the bottle is popped open!
